4 eggs
1 cup canola oil
4 ounces (one cube) butter, softened
1 cup sugar
1 cup brown sugar
4 tsp vanilla
3 cups grated zucchini
3 cups chopped walnuts
2 cups cake flour
1 tsp salt
2 tsp baking soda
2 Tbs cinnamon
1 tsp nutmeg
Preheat oven to 350 degrees.
In a mixing bowl, mix eggs, oil, butter, sugars, vanilla, grated zucchini and walnuts until blended.
In a separate bowl, mix flour, salt, baking soda, cinnamon and nutmeg.
Pour batter into cupcake cups or a loaf pan. To prepare the loaf pan, butter the pan, layer with parchment paper and butter the parchment paper.
Bake at 350 for 15-18 minutes or until done in the center.
