Red Velvet Cupcakes

Delicious red-velvet cupcakes with a cream cheese frosting

Ingredients

Cake:
2 1/4 cups flour
2 T unsweetened cocoa powder
1 t baking powder
1 t baking soda
1/2 t salt
1 cup buttermilk
1 T red food coloring
1 t distilled white vinegar
1 t vanilla
1 1/2 cups sugar
1/2 cup unsalted butter (room temperature)
2 large eggs

Frosting:
16 ounces cream cheese (room temperature)
1/2 cup unsalted butter (room temperature)
1 T vanilla 2 1/2 cups powdered sugar

Red Velvet Cupcakes

Technique


Cake:
Preheat the oven to 350 degrees. Mix flour, cocoa powder, baking powder, baking soda, and salt into a medium bowl. In a separate bowl blend buttermilk, food coloring, vinegar, and vanilla. Using an electric mixer beat sugar and butter until well blended. Add the eggs one at a time, beating until well blended after each addition. Beat in dry ingredients and buttermilk mixture alternatively. (Dry mix, buttermilk, dry mix, buttermilk, ect). Scoop the batter into a cupcake pan with liners. Bake about 16-20 minutes. Cool completely before frosting.

Frosting:
Beat cream cheese and butter until smooth. Beat in vanilla. Add powdered sugar and beat until smooth. Pipe or spread on cupcakes.
