California Cheesecake

Creamy cheesecake with Graham Cracker Crust

Ingredients

 

Crust:
16 oz graham crackers
4 oz melted butter
1/3 cup of sugar
Two 8 inch spring form pans
 
Cheesecake:
48 oz cream cheese
1 1/2 cups of sugar
4 tsp vanilla
6 eggs
 
Topping:
40 oz sour cream
 
8 oz of sugar

Technique

 

Preheat oven to 375 degrees F.
 
Crust- In the food processor, mix graham crackers, butter and 1/3 cup of
 
sugar. Pat into an 8 inch spring form pan. Bake for 5 minutes at 375.
 
Using an electric mixer, cream the cream cheese on slow speed until smooth.  Add 3/4 cup of sugar to cream cheese and keep creaming at slow speed.  In a separate bowl mix 6 eggs, 3/4 cup of sugar and vanilla -whip until well mixed.  Slowly add the egg mixture to the cream cheese mixture. When mixture is smooth, pour into the spring form pans.  Bake at 375 for 30 minutes - no longer.  Remove from oven.
 
Cheesecake topping: 
 
Preheat oven to 375 degrees F.  Combine sour cream and sugar. Gently spoon sour cream mixture over the cheesecake.
 
Bake for 8 minutes.  Chill for 8 hours before serving.
