Creamy Caramel Sauce

1 gal. granulated sugar
½ gal. water
Juice of one fresh lemon
½ gal. cream
1 pound of butter cut into chips
Add sugar to a large heavy duty sauce pot. Add water to sugar and add lemon juice.
Place pot over medium flame and bring to a boil.
Cook for 1 ½ hours or until the liquid becomes golden brown.
About 15 minutes before the liquid becomes golden brown, heat cream to a boil in a separate po.t When syrup comes to a golden brown take off heat.
Add boiling cream a little at a time while stirring.
Caution: If cream is added too fast it will boil over.
When all the cream is added, let cool to almost room temperature.
Add butter chips a little at a time until it is emulsified.
Store in a covered container in refrigerator.
Will last for a approximately two months.
