12 egg yolks
12 egg whites
2 cups sugar (divided into single cups)
1 pound butter
1 pound 2 ounce chocolate
2 teaspoon vanilla
1/2 teaspoon cream of tartar
Put egg yolks and egg whites into two separate stainless steel bowls.
Melt butter and chocolate in stainless steel bowl.
Add 1 cup sugar to egg yolks and whip in mixer for 5 minutes.
Add vanilla and chocolate to to egg yolk mixture.
Whip egg whites separately while adding cream of tartar until soft peaks form.
Slowly add one cup sugar to make the meringue.
Fold in meringue to egg yolk mixture (do not over mix)
Butter and cocoa two spring form pans.
Divide the chocolate mixture into 2 pans.
Place pans in 350 degree oven for approximately 50-60 minutes.
