Alfredo is a creamy sauce to be served over pasta.

- 1/3 jar of chopped shallots
- 2 Tbs garlic oil
- 1 cup garlic
- 2 1/2 gallons of water
- 4 (1/2 gallon) cream
- 2 1/2 cups of chicken base
- 1 box of corn starch with enough water to mix
- 2 pounds grated asiago
- 1/2 pound grated parmesan (grana padana)
Add shallots to a heavy duty pot with garlic oil over medium heat. Sauté for 10 minutes or until the shallots are transparent. Add garlic and stir for one to two minutes. Add water, cream and chicken base. Bring to a simmer for 30 minutes. Add asiago and parmesan and bring back to a simmer for 10 minutes. Taste and adjust then strain through a fine sieve for a smooth sauce.
Additional Sauces may be added to the Alfredo base such as, Spicy Apple Garlic Jam from Earth & Vine or Pear Gorgonzola.
