6 slices bacon, diced
1/2 cup finely chopped yellow or white onion
2 Tbs cornstarch combined with 2 Tbs water
1/3 cup apple cider vinegar
1/3 cup water
1/2 cup brown sugar
salt and pepper to taste
Fry bacon until crisp. Remove bacon from pan leaving the fat. Set bacon aside.
In the fry pan, add sugar and cornstarch mixture.
Add vinegar, water, and sugar to the fry pan.
Cook until thickened (about 1-2 minutes).
Remove from heat and add bacon and onion.
Serve warm over romaine lettuce or fresh spinach.
