Coconut Macadamia Cupcakes with Buttercream Frosting

Moist and delicious cupakes with a great combination of Coconut and Macadamia Nuts, and a sweet and rich buttercream frosting. A favorite!

Ingredients

4 eggs
5 Tbl coconut syrup
2 cups water
1/2 cup mayo
2 1/2 lbs yellow cake mix
1 cup coconut
1 cup macadamia nuts
 

Coconut Macadamia Cupcakes with Buttercream Frosting

Technique


Mix all the ingredients together in an electric mixer for 2 minutes. Bake in a muffin pan for 16-18 minutes at 350 degrees. Let cool before frosting.

Buttercream Icing

Ingredients:

2 lbs butter
5 cups powdered sugar
heavy cream
1/4 cup vanilla

Technique:
Mix in an electric mixer until smooth. Pipe onto cupcakes.
