4 1/2 cups butter
6 cups brown sugar
1 1/2 cups molasses
12 cups flour
12 tsp of baking soda
1 1/2 tsp salt
3 tsp of cloves
6 tsp of ginger
2 cups of granulated sugar for coating the cookies.
Preheat oven to 350 degrees F.
In a medium bowl, cream together butter, brown sugar, eggs and molasses.
In a separate bowl, combine dry ingredients (flour, baking soda, salt, cloves and ginger) and mix well.
Slowly add the dry ingredients to the wet ingredients and mix well but do not over mix.
Form the dough into a ball using a trigger scoop or by hand and roll it in white sugar. It is easiest to place the white sugar in a bowl. Pat the dough balls down slightly. add a little more sugar on top. Very lightly spritz with water.
Bake at 350 degrees for 7-10 minutes or until the edges are lightly brown.
