1 3/4 Cups Orange Juice
4 eggs
2 T orange extract
1/2 cup mayo
2 1/2 lbs yellow cake mix.
Mix all ingredients together in an electric mixer. Bake in a muffin pan at 350 degrees for 18-22 minutes. Let cool before frosting. Yields approximately 30 cupcakes.
Orange and Grand Marnier Icing
Ingredients:
2 T Grand Marnier
2 lbs butter
1 T orange extract
1 Cup Orange Juice
Zest 1 orange
Technique:
Blend all ingredients together in an electric mixer until smooth. Pipe onto cupcakes.
